Another recipe typical of Galicia filloas. In carnival I think there will not be a house that does not do it. There will be those who will not be able to do them, but they will take the same since in all the bakeries these days there are to sell. In my house they are made so much to the stone that for me they are exquisite as in a pan. Each master has his book and at home they made their whole lives with these ingredients; and they are delicious, I assure you.   • 8 eggs
  • 1 l. of milk
  • 750 ml of water
  • 2 teaspoons of spices for pancakes
  • 2 teaspoons of salt
  • flour the one that admits for a light cream (about 400 g)
  • 2 tablespoons cornstarch
  • 1 piece of bacon


In a large bowl we lay eggs. We add the milk and we beat again, we put the water and vatimos again, we add the species and the salt.

We sift the flours and we are adding it little by little and beat with an electric mixer, until we have a cream rather light and without lumps. The thinner the pancake is thinner, and this is what interests us.

Let stand 1 hour. We put a pan on the fire, and we anoint it with a piece of bacon (if we do not have with a kitchen brush we paint with oil). With a kitchen ladle, we remove the cream from the pancakes, we do this every time we take out a ladle of cream; and spread in the pan until the base is covered with a thin layer of cream. When we see that it comes off the edges we turn it over, until we finish with the cream.
